Pineapple Quinoa Recipe


Tonight I made pineapple quinoa. It was so good! The sweetness of the pineapple and the fluffiness of the quinoa was a delicious combination.

Here’s what I used:

  • 1 1/2 cup organic quinoa
  • 1 tsp. organic EVOO
  • 1 1/2 cup pineapple, cut into chunks
  • 1/4 cup organic green onions, chopped
  • 3 cloves garlic, minced
  • 2 tsp. organic soy sauce
  • sprinkle of cilantro




Cook your quinoa according to package directions. I cooked mine in 2 cups of organic chicken broth and 1 cup of water. Cut your pineapple into chunks. Set aside. Then heat a wok on high and add 1 teaspoon EVOO. Add your chopped green onions and minced garlic to the wok. Saute for 1 minute, then add your pineapple and quinoa and stir. Add 2 teaspoons soy sauce and cilantro, stir, and cook for another 30 seconds.

This was a side dish for Josh, but served as my dinner, and was very filling on it’s own. Quinoa is a complete source of protein, so unlike rice and other grains, it keeps you feeling full longer.

  1. This is yummy!! I also added red and green bell pepper sauted with the garlic. I’m thinking next time I might add some shredded carrots too. Loaded up with the fruit and veggies, it’s a meal in a bowl. Thanks for the recipe!!
